Ketogenic diet

Following this diet really isnt that bad. Although I miss rice so much that I did start having rice again , but I have put down the dairy, only very occasionally will I have some milk .   I have lost quite a bit of weight and dont wish to put it back on .,  I do have some great snack recipes I would love to share . THAT ARE KETO.   And they really help with cravings .  

Make your very OWN Cheese Crackers  YES they are delicious 

2 C shredded cheddar 

1C Almond Flour

2 oz Cream Cheese

1 Egg

½ Tsp Sea Salt

1 tsp Rosemary 

Mix all cheeses,  and melt in microwave . Add Flour, cool add eggs salt and season .    

roll out on parchment paper.  

Its  not as easy as it sounds. you really have  melt enough to get it to be a dough texture and really knead it.   Once you roll on parchment and make sure its as thin as you can get it. and you can use a pizza cutter to score it  Put in oven and bake on 350  until its nice and brown  let cool  

these are so good and take away your crunch cravings

Peanut butter KETO cookies

¼ C coconut flour

¼ c swerve 

¼ tsp stevia

1 c peanut butter

¼ c butter  softened 

2 eggs 

¼ tsp salt

1 tsp vanilla

mix it all until dough forms. drop balls of dough on parchment lined pan. 

flatten / criss cross with fork.    Bake  350 for  12-15 min . let cool  enjoy
